Mom cooked a huge turkey yesterday so we'll still eat some of her left overs today. But I did cook Sunday - we had pork and rice, and veggie burritos - put cream corn on a warm soft tortilla, spread shredded cabbage & carrots over it, cover with some shredded cheese, and top with salsa. Fold like a burrito and eat.. ..
