I'm going to do an experiment today while I'm home alone: Salmon croquets made not with flour or crumbs, but with milled flaxseed. The flaxseed is not a lowcost item, but I try to keep carbohydrates down and flaxseed cooks up with a consistency similar to coarse whole wheat flour. I use canned salmon for croquets. I'll go ahead and cook up the whole can's worth and put away the leftovers in the fridge to eat over the next several days. I don't mind eating leftovers for several meals in a row, including breakfast....Hope I have enough onions. I'm not going to the store--it's too cold to go out!
