I used Crisco to grease the tins a while back when I ran out of muffin liners - it did a pretty good job. But I do like the liners better when have them
If you haven't found a pumpkin recipe yet, here's one. It's a healthier version, but if you don't like the "healthier" taste, you can use all white flour. I've never used the flax seed called for in the recipe either.
1 c. pumpkin
1/2 c. water
1/4 c. oil
2 T. ground flax seed
1 t. vanilla
1 c. whole wheat flour
2/3 c. white flour
1 c. sugar
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 t. cinnamon
1/4 t. nutmeg
1/3 c. chocolate chips
1/2 c. walnuts, chopped
I neglected to write down any directions, but I just mix the dry, add in the wet to combine, then bake as you would any other muffins. I think it made 12 muffins.
