I'm coming into the Cutco discussion late but just wanted to add that I know from experience that they do back up their knives. (Also, my husband works for them, just so you know).

A librarian friend had some knives that are at least 30 years old and had my husband take them in to be repaired. A couple of them had gouges out of the blades (no idea what she used them for!). Cutco gave her new ones to replace them. They really do have a good service record.

They are very expensive knives, but they do stand behind them.
