Glad you liked them. If you want a twist on them, try adding some dried fruit - raisins, cranberries, snipped apricots. They are great for breakfast or snacks, too. I make them into mini-muffins, too (just reduce the cooking time slightly) .

A fun thing for kids is to use those plastic two part eggs that candy comes in - fill it with two mini-muffins (tops together in the middle) and send it off in their lunches. Saves squashed muffins and they really like those silly eggs.
