You might be thinking of hydrengas. Depending on the acidity or alkalinity of the soil, you can make them look pink, purple, or lavendar. I am not sure where green would come from, though.

You are right! They are hydrengas! Mine as I said are white and they turn shades of pink and lavender but also each one has the very palest green. I purposely pick the ones with green. It is such a lovely palette of color. This particular variety is seen everywhere here in Maine, though many also grow the deep lavender-blue. Come spring I will be in the local nurseries to find a nice healthy hydrengas to plant somewhere on our land!!
