From the research I've done on food storage, as I tend to keep huge quantities of things on hand, unopened shortening will keep for 10 years as long as it is stored in a cool dry place. IE kept some place where it gets too hot/cold and the humidity doesn't make the can rust. Once opened I think you have a few years. I have a huge can I was stupid enought to buy (I now buy smaller containers) and I used for years without a problem...so that's my two cents.
