We always keep kielbasa/Polish sausage in the freezer for quick meals - it can be pretty cheap if you get it on sale/with coupons. I slice that up and fry it with onions- let it stick a little bit and get brown. Then add some diced potatoes and water - scrape the bottom of the pan a little to loosen all those yummy browned bits. Let is cook until the potatoes are tender, adding more water when necessary. Easy and actually really good.

When you have time, buy a big package of ground beef and brown it. Then cook each celery, onion, and green pepper (1 c. each per 1 lb. beef) in the drippings. Freeze 1 lb. meat, 1 c. each of the veggies together in a baggie. When you want chili, throw it in the crockpot with some tomato sauce, diced tomatoes, canned beans, chili powder...whatever else you want (i.e. corn). Let it cook on low all day and come home to a good meal.

For those nights when I have nothing planned...breakfast for dinner. Usually pancakes from scratch (only one step harder then making them from mix) and sausage.

Oh, here's another one - egg noodles, canned chicken, water/milk, Parmesan cheese, and veggies (peas or broccoli, usually). Can be made in the time it takes to cook the noodles. Just cook them with water/milk (don't drain - leave a little liquid for the cheese to melt into), take it off the heat and add the rest.
Oh yeah, one more. A dish my father used to make in his bachelor days, so you know it's gotta be easy Slice up a few potatoes as thin as possible, throw in a frying pan with Crisco or butter, and add a few sliced hot dogs. Again, make sure you let the potatoes get nice and brown on the bottom. Cook them on med/low for a while. I'm not going to pretend that these are the healthiest dishes, but they are all quick, easy, and tasty
