A lot of businesses don't seem to recycle employee bottles and cans. At a couple places i've worked, I've just "accepted" the recyling and made incidental money. Maybe if you solicited a couple local places, they'd let you stick a bin in if you cam to pick it up frequently? Especially if you had a tie, like the neighbor was an employee, or you were a regular customer?

If you have a source of free fruit (blackberries in my region), make Jam and sell. If you do it right, pectin and the other items can be darn cheap, and people are willing to pay crazy money for local homegrown hand craft items, especially if you can do a nice label.
