We did exactly this whenever we went on vacation. We put our son in charge of the vacation budget. We worked out, as a family, how much we would spend on each meal, gas, tolls and entertainment. He was responsible for keeping us on target and this stopped all the whining at the souvenir stands.
The amazing part is that we always came home with leftover money and he got to keep it.
