I prefer organic simply for the protection of the environment and my personal sensitivity to chemicals. My body can't process Red #40 (a harmless dye used in a lot of processed foods) or Nitrites very well. I would hate to encounter a pesticide that my body doesn't process well since usually my breathing or my digestion is the first to go.

Milk I prefer organic/ local and natural (yes I know there's no regulation of that word) because it tastes better (not sure how they are transporting it but twice I have had to give up regular milk brands because the milk tasted like something other than milk often enough for me to say enough).

For the most part though, I just eat minimally processed food, not organic.
