Not really a recipe, but an idea... Make a soup, with plenty of homemade croutons. I did this a while ago and it turned out great. Season/brown the beef, throw it in a pot with some water (or broth if you have it), add the veggies, maybe some beans or barley. Soups are all about the seasoning anyway--from there, add whatever you want to it. Tortilla chips, rice, noodles, etc... all good.

Now for the bread.... Cut it up into chunks, and throw it in a big mixing bowl. In a small pan/pot (med heat) combine some butter, olive oil, garlic, and italian seasoning (basil/parsley/oregano). Let that cook a bit (to get the flavors infused into the oil/butter), then toss it with the bread chunks. Coat them all evenly, and toast them on a cookie sheet for ~5-8 minutes at 350F (basically, until they start to turn golden-brown). Throw some in a bowl, ladle some soup over top. Add some more croutons (just because they taste great... also, they absorb alot of broth, and again--tastes great), and enjoy.
