Ate freezer pancakes for breakfast. I used to actually throw away the leftovers when I made pancakes. Now I just throw them into a freezer bag, squeeze out the air, and save for another day. A quick zap in the microwave, then into the toaster for a super quick breakfast. (works wonderfully with waffles too).
My mom and I spent the week trying to use up some food from the freezer. Among the meals we concocted (without having to run to the store): kielbasa and bean soup, enchilada casserole, sausage and potato soup.
