Howk055- No problem. If you like them coated then try flour- egg water wash-panko (Japanese breadcrumbs) Put them on a baking sheet in the fridge until you are ready to cook them. Oven 400 degrees- preheat- drizzle fillets with oil- put cold pan in oven- it will take about 15 minutes depending how thick the fillets are- flip them over just to make sure the bottoms are crispy, too. 5 more minutes and yummm- Funny enough- this is what we had for supper last night.

Non- coated fish fillets- REALLY easy-- Baking pan- put a layer of fish, toss on whatever vegetable you like to use- I put zucchini- yellow squash- celery- onion- colored peppers- whatever- pour a can of cream of shrimp or lobster bisque soup(thinned with a little milk) . Pop the pan in the oven and bake for 20 - 25 minutes.

Zesty- coat fillet with one of the Zatarain, Emeril, or Louisiana Fish Fry product seasoning mixes- we often use the BBQ shrimp sauce mix. I just roll the fillets in the dry mix- drizzle a little oil and bake.

You can use any kind of sauce mix you like- cheese- italian dressing- teriaki- plain soy sauce and garlic- etc etc etc.

We eat fish twice a week---it was a good bass fishing season this year!
