We've caught quite a few catfish this year, and when we caught the first one, I wanted to add some pork chops to the grill because I was sure they would taste muddy. But, we put them in aluminum foil, added butter and Tony Chachere's Cajun Spice, wrapped it up and put it on the grill. In another packet, mushrooms, zucchini, yellow squash, onions, and green peppers with olive oil and Tony Chachere's. Cook this SLOWLY, as low as your grill can go. I couldn't get enough of this, and other than the butter very healthy.
