If you're talking about after-the-fact, you can probably call those you gave to. If they're a decent charitable organization, they'll have a record of your gift, and will be willing to provide you a receipt even if a long time has passed. Believe me, they want to work with people as easily as possible, in order to facilitate people giving in the future.
