Bubble N' Squeak - Made w/leftover frozen Christmas ham, potatoes, onion, garlic & shopped cabbage, lots of bacon grease! Myy my my - a heart attack waiting to happen! EEK!

...But T.A.S.T.Y. And good hearty ice-y winter fare.

In a large soup pot w/lid I start w/the bacon grease, onion & garlic, toss in thinly sliced potatoes - almost the fry point - you know when they loose their whiteness but haven't started yet to brown, then add the ham and cabbage last, season w/salt & season all. Throw on a lid or tight foil so the cabbage is steamed. Do not leave the area, but every 3-4 minutes lift the lid and stir the pot so things don't get blackened on the bottom. Your potatoes will be somewhat mooshy when this is done right. It's done when cabbage has gone limp.

Strangely when I pull up bubbleN'squeak on the internet it tells me this is an English dish done w/roast beef, but I learned it from Hubster's grandmother - as an 'old school' Pennsylvania Dutch recipe. This is the only way I can eat cabbage and there really isn't that horridly icky smell you get w/cabbage when you boil it. ICCCCK & EWWW!!

I was told by a 'waterless cookware' salesman once that it was the chem reaction w/water that makes cabbage stink and to quit washing my cabbage right before cooking it. Wash it first, like early in the day, let it dry all day and then cook it. Dunno, but this way it doesn't stink like you remember when your Mom used to cook it and I wash the cabbage right before chopping it.

Anyway, cabbage and potatoes are inexpensive foodstuffs, so when there is leftover ham (not often), out comes this meal. You won't find this recipe in your Weight Watcher's program, okay? Okay. There are calories here people - this was common fare for hardworking farm people. So, if you are taking the weight challenge here seriously do not try this at home unless you are a fanatic saint who can tightly control your portions.
